If you’re like me, you enjoy homemade meals during the spring and summer months, but try to avoid heating up the house at all costs, right?

 

Hey it’s Deb stopping by again from Bowl Me Over and I wanted to share a delicious and easy recipe with you today! Instant Pot Mashed Potatoes and what makes them even better?

 

The gravy is made right in the Instant Pot too – gotta love that right? One dish for cleanup and you don’t heat up the entire house to make a side dish!

 

These mashed potatoes go fantastic with my fall off the bone Barbecued Pork Ribs – also made in the Instant Pot and finished off on the grill!

How long do you cook the potatoes in the Instant Pot?

1 1/2 pounds of potatoes cook on the steam setting in just 12 minutes! Then with a quick release you’ll be ready to mash the potatoes as soon as the pressure is ready to release.

 

How full can you fill the Instant Pot?

Never fill the Instant Pot above the max fill line. If you’re cooking liquids it should never be above two thirds full. This is for safety to ensure there is plenty of space to allow the pressure cooker to do it’s work.

Grocery List to make Mashed Potatoes in Instant Pot with Homemade Gravy

  • 1 1/2 pounds Yukon Gold Potatoes
  • one box stock
  • cream or milk
  • butter
  • flour

I love how easy these are to make and I also love that the entire process doesn’t heat up your house. Living in Fresno with temperatures in the triple digits for weeks at a time, heating up the house is a real issue!

 

These tasty mashed potatoes come together in a snap for a couple of reasons:

  1. They are made in the Instant Pot (great time saver!!)
  2. When you use Yukon gold potatoes or baby red potatoes you don’t need to peel them! Just give them a hefty scrubbing and they are ready. My personal preference is Yukon gold potatoes because I like the creamy texture, but no reason to buy something special – use what you have on hand.
  3. Using pre-made stock as the base for steaming flavors the potatoes and the leftover liquid makes delicious gravy right in the Instant Pot!

Steps to make Instant Pot Mashed Potatoes with Homemade Gravy

  • Scrub and clean the potatoes well.
  • Cut large potatoes into three pieces
  • Add the potatoes to the pressure cooker.
  • Add the stock
  • Secure the lid. Press the steam setting and set the timer to 12 minutes.
  • While the potatoes are cooking mash together butter and flour completely.
  • When the timer goes off, remove the potatoes, strain and save the liquid.
  • Mash the potatoes, seasoning with butter, cream
  • Return the liquid to the pressure cooker. Change setting to sauté.
  • When the liquid is boiling, quickly whisk in the butter/flour mixture. Whisk together until the liquid begins to thicken and continue cooking for about three minutes.
  • Taste and adjust seasoning.

 

Done! The potatoes are creamy and delicious and using box stock makes a delicious gravy! Gotta love a simple meal!

 

Ok… a couple of great hints when you’re making mashed potatoes 

  • Don’t over mash them, this will cause the potatoes to become gummy. Adding warmed milk/butter also helps keep them from getting sticky!
  • What if you get all the way to the end and your gravy has lumps, do you throw it out? Of course not! Just run it thru a sieve to remove the lumps OR tell everyone that’s the way you like it! 😀 Hey life’s too short to sweat the small details, right?

  • 1 1/2 pounds Yukon Gold Potatoes
  • 4 cups stock
  • 4 tbsp butter (divided)
  • 1/4 cup milk or cream (warmed)
  • 2 tbsp flour
  • salt and pepper to taste
  1. Scrub and clean the potatoes well. Cut large potatoes into three pieces and add the potatoes to the pressure cooker.
  2. Add the stock. Secure the lid of the pressure cooker. Press the steam setting and set the timer to 12 minutes.
  3. While the potatoes are cooking mash together 2 tablespoon butter and 2 tablespoons flour. Make sure it’s completely creamy – no lumps!
  4. When the timer goes off, remove the potatoes, strain and save the liquid.
  5. Warm the milk/cream and butter mixture slightly. Just enough to get the butter to melt and the dairy warmed up.
  6. Mash the potatoes, seasoning with butter and warmed cream. Salt and pepper to taste.
  7. Return the liquid to the pressure cooker. Change setting to sauté. When the liquid is boiling, quickly whisk in the butter/flour mixture. Whisk together until the liquid begins to thicken and continue cooking for about three minutes. Whisking frequently.
  8. Taste and adjust seasoning in the gravy and the potatoes. Serve and enjoy!

Hey there! It’s Deb stopping by again from Bowl Me Over. Today I’m sharing one of my favorite cookie recipes. This Oatmeal Peanut Butter Cookie Recipe has been in our family for years and passed down to me from my Grandma.

These cookies are crispy around the edges. Sweet, chewy and delicious! If there is a peanut butter lover in the house, they will love these cookies!

I was paging thru our family cookbook last week and because my hubby has a BIG sweet tooth, I knew I needed to make these cookies! Dan is my official taste tester and has the most discerning pallet.

And he immediately grabbed a handful and went back into his office.

Yep, they definitely passed the Dan taste test! ?

Shopping list for Oatmeal Peanut Butter Cookies

  • old fashioned oatmeal
  • brown sugar
  • butter
  • eggs
  • sugar
  • peanut butter

The cookies are really easy to make!

Directions to make Oatmeal Peanut Butter Cookies

  1. cream together the sugar and softened butter
  2. add the peanut butter, eggs and vanilla – mix again
  3. sprinkle with salt, baking soda and oats thoroughly combine
  4. scoop out cookie dough, shape into a ball and roll in sugar
  5. bake until crispy on the edges, but still soft and chewy

Before baking, roll the cookie dough in sugar and place on the baking sheet.

This recipe calls for softened butter, but what if you forget to taken the butter out of the fridge?

Ways to soften butter

  • Leaving the butter on the counter for about 30 minutes will soften it.
  • Cutting the butter into small chunks will help it to soften more quickly
  • Setting the butter over a warm water bath will also soften it.

I prefer to leave it on the counter. By the time I gather the ingredients and preheat the oven, the butter is just about ready to use. I’ve tried microwaving butter for those times I forget and have found it melts it too much and then you’re starting over.

Is the sugar bath optional?

Before baking I roll the cookies in sugar and then lightly press them down with a fork in a criss-cross pattern. Is the sugar bath optional?

Yes, I suppose so, but it makes for such a delicious crispy cookie!

These cookies come out perfectly every time and it makes a ton! About 60 cookies, so it will definitely fill up your cookie jar!

  • 1 cup brown sugar
  • 1 cup white sugar (plus 1/4 cup to roll dough in)
  • 1 cup butter (softened)
  • 2 eggs
  • 5 cups oatmeal (old fashioned)
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 cup peanut butter (you can use creamy or crunchy peanut butter)
  1. Preheat the oven to 350 degrees

  2. Using a stand mixer, cream together the sugar and butter.

  3. Add the peanut butter, eggs and vanilla – mix again.

  4. Sprinkle in the salt and baking soda. Add the oats thoroughly combine.

  5. Add the reserved sugar to a small bowl .

  6. Using spoons or a small ice cream scoop, scoop out cookie dough, shape into a ball and roll in sugar.

  7. Bake for 10-12 minutes or until crispy on the edges, but still soft and chewy.

Are you ready for the holiday? If you’re getting your grill on, I have a terrific side dish, that everyone will be grabbing the instant it comes off the grill!

 

Hey friends, it Deb stopping by again from Bowl Me Over. It’s summer and we are doing a ton of grilling, so today I thought I’d share with you an easy recipe for a terrific side dish made right on the grill.

 

Bacon. Wrapped. Asparagus. Need I say anymore?

 

The salty bacon gets crisp while the asparagus is perfectly tender. And it is delicious! Everyone will be fighting for seconds!

Let’s go thru the basics.

 

How do you trim asparagus spears?

  • Rinse the asparagus to remove any grit and then snap off the woody end. You can save the end pieces to make stock if desired.

Steps to make Grilled Bacon Wrapped Asparagus

  • Prepare a bundle with about 5-6 spears
  • Wrap tightly with thin sliced bacon – 2 slices of bacon per bundle
  • Grill on all sides until the bacon is crispy
  • Sprinkle with parmesan cheese the instant it comes off the grill

Wrap the bacon around the asparagus bundle.

What temperature to cook bacon wrapped asparagus?

  • Preheat the grill to 350-375 degrees. Try and keep the grill within that temperature range. Definitely less than 400 degrees. Below that the bacon will just steam. Much more than that and the bacon will burn and turn black. I know…. I’ve done the research! 😀

How do you cook asparagus with bacon wrapped around it?

  • Be sure to oil the grill well. Add the bacon wrapped asparagus and close the lid. Flip it every three minutes or so. Don’t futz with it, just rotate it to the new side. Continue turning the bundles until the bacon is crispy on all sides.

Take your time and be sure the bacon gets good and crispy!

 

Just be patient – this takes about 20-25 minutes to cook. You want the bacon good and crispy! The hardest part is not eating this as soon as it comes off the grill!

 

Sprinkle the bundles with Parmesan cheese the instant you take it off the grill so it melts and gets all cheesy! Lightly cover the side with foil until you’re ready to serve.

Hey it’s Deb stopping by again from Bowl Me Over. Are you ready to get your grill on? Today I’m serving up some easy grilling food and you’re not going to believe how quickly this is on the table!

 

Have you grilled lamb at home? We grill chops often. It’s an affordable protein that’s easily made and is ready in a snap. It’s deliciously paired with many sides, but it can be intimidating – I get that!

 

Today I’d like to share with you my fail-safe method for tender flavorful chops!

 

How long do you grill lamb chops?

  • Cook them on high heat quickly – no more than two to three minutes per side – the worst thing you can do is overcook lamb. It becomes tough and tasteless.
  • Since lamb chops can differ in size using a thermometer makes sense. It’s the best method to ensure your chops are cooked to the temperature you prefer.  110° for rare, 130° for medium-rare or 150° for medium.

How do you cook lamb chops?

  • Brush with olive oil, sprinkle with seasoning and cook them quickly over high heat.

Is lamb good for you?

  • Lamb is a low fat, high quality protein rich in vitamins and minerals. It’s a great choice for your meal time rotation.

 

The seasoning for these chops is my Chef’s Blend Seasoning Rub. It’s an easy, flavorful rub you make at home from herbs and spices you already have in your cabinet.

 

It takes less than five minutes to make and will store up to six months. Bonus? Because you make it yourself, you know what’s in it!

This is an easy and flavorful way to spice up your meal!

 

This seasoning mix contains; cumin, toasted sesame seeds, red chili powder, turmeric, oregano, sumac and salt. Don’t have sumac in your cabinet?

How to grill lamb chops, starts by getting your grill screaming hot so the meat will sear quickly.

Steps to grill lamb chops

  1. remove the chops from the fridge and allow them to come to room temperature
  2. while they are resting, brush with olive oil and spinkle with spice mix, salt and pepper
  3. allow to rest for 20-30 minutes
  4. when you are ready to grill, get the grill screaming hot!
  5. sear the chops 2-3 minutes on side one, flip and do the same for side two
  6. remove from the grill immediately, place on a platter and cover with foil
  7. allow them to rest for the juices to redistribute into the meat, this will keep them flavorful and juicy!

Loin chops and rib chops work great on the grill. This recipe uses rib chops. The end of the bone has been removed. However if you have the opportunity to buy full chops with the rib, get those! Many remove the fat from the ribs, I don’t! I recommend keeping the whole rib intact. Fat = flavor, plus the bone is easy to grab and makes for great finger food!

Lamb Chops are quickly seared and tender when you follow a few easy steps. This is a quick meal that can be fancy, but fast and easy enough for a simple weeknight meal too! This recipe gives you step-by-step directions so you can grill lamb chops perfectly every time!

  • 8 lamb chops (one inch thick)
  • 2 tsp chef's blend seasoning rub
  • 2-3 tbsp olive oil (divided)
  • salt and pepper (to taste)
  1. Remove the lamb chops from the refrigerator. 

  2. Season the chops – brush them with olive oil and sprinkle with chefs blend spice mix, salt and pepper to taste.   

  3. Allow to come to room temperatures for 20-30 minutes before grilling.

  4. When you are ready to grill – get the grill screaming hot! Brush the grill lightly with olive oil.

  5. Sear the chops for 2-3 minutes on side one. Flip and do the same for side two.

  6. Remove from the grill immediately, place on a platter and cover with foil. Allow to rest for 10 minutes prior to serving.
